Pasta Fagioli Recipe

Pasta Fagioli is a wonderful Italian Soup that is perfect for fall or winter. We love to serve this delicious soup with garlic breadsticks. Please watch the video below to see how I make it.

Pasta Fagioli

1 can cannellini (white kidney beans), drained

1 pound ground Italian sausage, turkey or pork

½ medium onion, chopped

1 medium carrot, chopped

2 garlic cloves, minced

1-14 ½ ounce can diced tomatoes

6-8 cups chicken broth

3 Tablespoons olive oil

1 teaspoon dried thyme (you might want to add a little more)

1 bay leaf

Salt and pepper, to taste

1 cup small pasta

Grated Parmesan and Romano cheese


In a large pot, brown Italian sausage. Drain and remove from pan and set aside.  Add 3 Tablespoons of olive oil. Cook onions and carrots for about 2-3 minutes or until soft.  Add garlic and cook for another minute.  Add tomatoes, chicken broth, thyme, bay leaf, salt, pepper and beans. Cover and cook for 1 hour on low heat.


Add pasta and cook until pasta is al dente.  Adjust seasonings to taste.


Sprinkle each serving with grated Parmesan and Romano cheese.
