Weekly Food Prep and Salted Caramel Corn Recipe

In this video, I share all the food prep I did throughout the week and share some tips that will hopefully be helpful to you. I also make some delicious salted caramel corn and make it a little “healthier” by replacing the usual corn syrup with honey and using coconut sugar. The recipe is below.

Salted Caramel Corn:

2 Tablespoons coconut oil
1 cup popcorn kernels
6 Tablespoons butter
1 cup coconut sugar or brown sugar
1 Tablespoon honey
1 teaspoon vanilla
1/2 teaspoon sea salt
1/2 teaspoon baking soda

Heat 2 Tablespoons coconut oil in large pot. Add a few popcorn kernels and cover pot. When the kernels start to pop, add 1 cup of kernels. Cover and shake pan over medium high heat until you no longer hear the kernels popping.

In a medium sauce pan, melt 6 Tablespoons butter, 1 cup coconut sugar or brown sugar, 1 Tablespoon honey, 1 teaspoon vanilla extract, 1/2 sea salt. Mix all ingredients together over medium heat for about 5 minutes until bubbly. Stir continuously and be careful not to burn. Add 1/2 teaspoon baking soda and mix until foamy. Immediately pour of popcorn and mix well.

Heat oven to 200 degrees. Spread popcorn on two baking sheets lined with parchment paper. Bake for 1 hour, stirring every 15 minutes.
